HFK Patties (Rice, Bacon, Egg & Vege)
No exact measurements to give as I just throw everything in and know by eye if it looks right but I can guess and then you can modify as you go to suit your taste. I cooked brown rice in my rice cooker first.
So as a trial......
Use about 2 cups of cooked rice
Mix with 300grams of bacon cut small
Grate a carrot & zucchini
About 1 cup of grated cheese
A shallot or two
6 free range eggs and
Any other vegetables that are a family favourite (corn kernels and peas are great).
Lastly add 2 tablespoons of white chia seeds and mix everything well.
Sometimes I add pepper and spices.
I don't add salt as bacon is salty enough I find, but you can.
If you think it needs to be a little wetter because of the ingredients and amounts you have used, you can add a couple of tablespoons of milk.
Pop mixture into your muffin tray and cook on about 150 Celsius (300 Fahrenheit) until egg is cooked, cheese is melted and Patties look golden & crispy on top.
I have a strong fan forced oven and it took about 30 minutes to cook.
Enjoy and let me know how you go :-)
